3 very ripe bananas
2 cups rolled oats
1/2 cup dried cherries
1/2 cup semi sweet chocolate chips
1/3 cup canola oil
2 tsp pure vanilla extract
Preheat the oven to 350*. In a large bowl, mash the bananas with a fork until smooth and creamy. Add in the remaining ingredients and stir well. Let the mixture sit for at least 15 minutes, this will allow the oats to soak up some of the moisture and will help hold the “cookies” together. Drop the batter onto and ungreased cookie sheet by the teaspoonful. Bake for about 20 minutes until the tops are lightly brown and the bottoms are golden brown. Serve warm.
