Ingredients:

2 cup oat flour

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

2 tbsp ground flax seed

1 1/4 cup buttermilk

1 egg

1 tbsp mild oil like walnut or canola

1 tbsp agave nectar (or honey)

Instructions:

Preheat a griddle to 325*. Combine all of the dry ingredients together in one bowl. In a separate bowl, whisk together the wet ingredients. Make sure that the agave (or honey) doesn’t sink to the bottom. Mix together the wet ingredients with the dry ingredients until just combined; the batter may be a bit lumpy. Allow the batter to sit for 5 minutes.

Using a 1/4 cup measure, pour the batter onto the griddle, making about a 4 inch circle. Flip the pancakes once the bubbles that rise in the center of the pancake begin to burst. Only flip the pancake once. Allow the panckae to cook for another minute to cook through. Both sides should be golden brown.

To keep the pancakes warm, put them in a pan and keep in a 200* oven until ready to serve. Top with pure maple syrup, agave nectar, honey or yor favorite pancake topping.

Makes about 8 4 inch panckaes.
